The best way to celebrate fall: eating anything and everything pumpkin-flavored.
Starting in late September, pumpkin goodies are everywhere, like LITERALLY everywhere. Even if October has 85 degree days here in Dallas, you know it’s fall when Starbucks adds the legendary pumpkin spice latte to the menu. Pumpkin pie, pumpkin cookies, pumpkin bread…you name any kind of baked good, and I promise there is a pumpkin version somewhere close by.
When I was lucky enough to have a kitchen and full-time, personal chef (aka my mom) before the infamous Arnold and Umph became my “kitchen,” I could almost always count on coming home in the fall to my most favorite treat ever…pumpkin chocolate chip muffins! They are magical, dreamy, heaven-on-earth, delicious…well, I could keep going, but I think you get the point. Everyone needs to try at least one of these in your lifetime. So, here is the recipe that no one should have to live without!
- 1/4 cup of white sugar
- 1/2 cup of brown sugar
- 1/4 cup of vegetable oil
- 2 eggs
- 1 cup of canned pumpkin
- 1/4 cup of water
- 1/2 cup of flour
- 3/4 tsp. of baking powder
- 1/2 tsp. of baking soda
- 1/2 tsp. of cloves
- 3/4 tsp. of ground cinnamon
- 1/4 tsp. of salt
- 1/2 tsp. of nutmeg
- 1 bag of chocolate chips
- Preheat oven to 400 degrees
- Mix sugar, oil and eggs. Then, add pumpkin and water.
- In a separate bowl, mix flour, baking soda, baking powder, spices and salt.
- Combine the two bowls and stir in chocolate chips.
- Fill the muffin cups about 2/3 full with the batter.
- Bake for 20-25 minutes.
These pumpkin treats are really only “in season” for a few months, so seriously ditch the juice cleanses and splurge on all things pumpkin! Get baking, ladies!
